“It is not meant for all of us to farm. But it is meant for all of us to eat. And we all have a right to nutritious food to keep us ‘healthy, wealthy and wise.’ To the greatest extent possible, this means local food.” ~ John E. Carroll

"-the terms “fryer” or “young rabbit” refer to a rabbit weighing not less than 1 1/2 pounds and rarely more than 3 1/2 pounds, and less than 12 weeks of age. The flesh is tender, fine grained, and a bright pearly pink color. These rabbits may be cooked in much the same way as young poultry." The older and heavier the rabbit gets the flesh becomes "firm and coarse grained, and the muscle fiber is slightly darker in color and less tender. The fat may be more creamy in color than that of a fryer or young rabbit. The meat of larger rabbits may be tougher so the best methods of n cooking are braising or stewing."

High-Protein, Low-Calorie Rabbit
"Here is the USDA breakdown of several meats:
You can see from this chart that rabbit has more protein and fewer calories than any of the popular meats! It contains less moisture, which means you don't purchase water. Neither do you pay for the skin, which, in the case of chicken, many find fatty and rubbery and only throw away. Recent studies have also shown that rabbit compares favorably to chicken in its low cholesterol content. Anyone concerned about heart disease should consider the merits of rabbit meat."
